Juneteenth Comfort Biscuit

 

We dream in breakfast food—nightmares of oatmeal, eggs erotic in omelets or over easy, dry toast that crumbles upon waking, in our dreams it is always morning.


Inspired by ee cummings and breakfast sandwiches.
 

The recipe

2 biscuits as the picture suggests
2 eggs
Pesto (any kind, homemade or store bought)
2 slices sharp cheddar cheese

Pre-heat a skillet, with two well buttered English muffin rings, over medium heat. Add eggs, cheese, and pesto. Cover pan, lower heat to low, and cook until egg whites are firm and the cheese melts (about 5 minutes). Loosen eggs from rings with a knife and remove rings. Place on open biscuits.

Serve with favorite breakfast beverage and these Free Range Chicken Eggs that our ancestors have cracked open over the past 154 years:

    1. You can walk away (and so can anyone else)

    2. Hard work doesn’t always lead to “success”

    4. “Overnight successes” don’t exist (and you need a pinch of luck)
