Gorditas De Hevos

Image
Gorditas de huevos is a Mexican dish of masa cakes filled with eggs.  The gorditas are made with masa harina, salt, and water. The dough is fried on both sides until golden brown, and it is then topped with scrambled eggs. The eggs can be enriched with garlic or chili peppers, if desired. When served, gorditas de huevos are often accompanied by hot sauces on the side. Here at the Ranch we serve the gorditas with pithy Mexican proverbs.   Mexicans Don't Kiss, We Make Out// We Don't ReLax, We Chill// Mexicans Aren't Just Friends, Somos Carnales

Poached Eggs

Image
A poached egg is an egg that has been cooked, outside the shell, by poaching, as opposed to simmering or boiling. This method of preparation can yield more delicately cooked eggs than cooking at higher temperatures such as with boiling water. You can poach eggs without trouble but you should not poach your friends or anyone's property. .flickr.com/photos/45688285@N00/551387819 In the entire world, sharks kill fewer than ten people a year, while coconuts falling from trees take out 150. ― Stuart Gibbs, Poached

Nest Eggs

Image
A hen will lay an egg anywhere she feels safe. For a long time we kept our chickens in a run due to coyotes in the area. At some point we decided to let them out to roam the property. The longer they were out, the fewer eggs we found in their nesting boxes. Here's some we found on the range. Photo by Annie Spratt on Unsplash A “ nest egg ” generally refers to retirement accounts. ... There's no single correct amount to save for retirement. For example, a $500,000 nest egg may be a good amount, but some retirees may be able to live on less than that. Others may need more than that, depending on where they live and how many dependents they have. Once you're retired and are no longer counting on earned income to live on and supplement your nest egg, you're done with disability insurance. At that point, though, the need for long-term care insurance - which protects you from spending that nest egg too fast - takes over.-- Jean Chatzky
